Update 6/21/2021: After making 90 potsticke, I got a blister from the dough cutter, which is just a thin plastic ring. To make cutting the wrapper easier, I made a better cutter called "dough cutter 2". It's got a handle! When I hold it in my hand, it looks a lot like the holy grail from Indiana Jones. However, you can cross the seal with this one. Doesn't grant eternal life, but who needs that when you have homemade potsticke. Works great, just make sure the cutting edge is dry and/or lightly floured or the dough will stick. Enjoy! This is an improved press for making potsticker dumplings. It replaces a commercial hand press that didn't work very well. The press is comprised of two halves that rotate together to form the dumpling and create a seal on the noodly dumpling wrapper. A circular die for cutting the wrapper is also included. Note that the 'bearings' on either side of the press body serve to guide the press halves together during pressing, but don't link the two parts together. This simplified the part design and made it easier to clean. Itructio: Printing: Use PLA, as the somewhat preferred plastic for contact with food. Works well with 2 skin laye, might want to do 3 skin laye for extra strength. Making potsticke: Lightly flour the surface as needed to prevent wrapper from sticking. If the press surfaces become wet during operation, wipe dry with a cloth to prevent sticking. Put enough filling to fill the depression in the mold like a measuring cup- enough to create a flat surface of filling and do not heap! Use a silicone food brush (or your finge!) to wet the circular seal area with water to eure a good seal. With the press halves lying flat on the table, rotate the press closed using both hands to rotate the halves together to a vertical position with the body resting on the table at the hinge line. Clean up: Hand wash with light soap. It's okay to run it under a faucet, but do not immee in water in order to prevent the hollow parts from taking on water. Don't put it in the dishwasher, as it will get waterlogged and may melt in the hot water process. I hope you like this little tool- It really helped me to realize fresh potsticke!
